Budleigh has a lot of substantial detached housing in generous plots, much of it owned by the same household for decades and lightly altered in that time. The kitchens are often original to a refit done in the nineties or before, and the cooker in them has been cleaned regularly on the outside and hardly at all on the inside.

That combination produces a particular booking. The kitchen is immaculate, the hob is wiped daily, and the oven has twenty years of carbon on the roof of the cabinet that nobody has ever been able to reach. Nobody needs to stay in the room. Somebody has to let us in and be there at the end to look at the work, and the hours in between are better spent elsewhere in the house. Where mobility makes it easier, the cooker is left completely rebuilt and tested rather than with anything to reassemble afterwards, which should go without saying but is worth saying anyway.

The front ranks of housing get spray in winter storms and the stainless in those kitchens shows it, but the valley sides shelter most of the town and the effect drops off quickly a few streets back from the beach.

Where it does bite, the answer is the same as anywhere on this coast: the grease goes first, because it is what holds the salt against the steel, and the polish afterwards is what brings the finish back. Anything that has already pitted stays pitted, and saying so beforehand is better than implying a clean will fix it.
